Brunch ideas using poached eggs?

I would really like to make poached eggs for a brunch tomorrow (I just learned how), but am not sure what I can use them for. I live in a country where I can't buy English Muffins so Eggs Benedict are out. I won't be able to get cornmeal in time so I can't bake them myself, either.
